How long does a Gusto to Rippling migration take?

About 45 days for a single-entity company, longer if you are consolidating multiple entities or exiting a PEO at the same time. The gating item is running a parallel payroll cycle before cutover, which cannot be rushed.

Will payroll break during the move?

It should not, if you cut over on a pay-period boundary and run one cycle in parallel first. The failure mode is switching mid-period or trusting the migration without a parallel run.
